Shrimp biriyani is a popular dish that combines aromatic rice with succulent shrimp, fragrant spices, and other flavorful ingredients. 


Here's a recipe for making delicious shrimp biriyani:



Ingredients:


* 1 lb. shrimp, cleaned and deveined

* 2 cups Basmati rice

* 2 tbsp ghee or oil

* 2 medium onions, sliced

* 2 green chilies, slit

* 1 tbsp ginger-garlic paste

* 1 tsp cumin seeds

* 2 bay leaves

* 4-5 cloves

* 4-5 green cardamom pods

* 1-inch cinnamon stick

* 1 tsp turmeric powder

* 1 tsp red chili powder

* 1 tsp coriander powder

* 1/2 cup yogurt

* 1/2 cup chopped fresh cilantro

* Salt to taste




Instructions:



1. Wash the rice in several changes of water until the water runs clear. Soak the rice in water for at least 30 minutes.


2. Heat ghee or oil in a large pan. Add cumin seeds, bay leaves, cloves, green cardamom pods, and cinnamon stick. Fry for a few seconds until fragrant.


3. Add sliced onions and green chilies. Fry until the onions are golden brown.


4. Add ginger-garlic paste and fry for a minute.


5. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.


6. Add the shrimp and fry for 2-3 minutes until the shrimp turn pink.


7. Add yogurt and mix well. Cook for 2-3 minutes.


8. Drain the rice and add it to the pan. Mix well.


9. Add 3 1/2 cups of water and chopped cilantro. Mix well.


10. Cover the pan and cook on low heat until the rice is cooked and the water has been absorbed. This should take around 20-25 minutes.


11. Once the rice is cooked, remove the pan from heat and let it rest for 5-10 minutes.


12. Serve hot with raita, salad, or your favorite side dish.
