Chicken Degi Biryani is a flavorful and aromatic rice dish that originates from the Indian subcontinent. Here's a recipe to make delicious Chicken Degi Biryani:



Ingredients:



For the chicken marinade:


* 500g chicken, cut into pieces

* 1 cup yogurt

* 1 tablespoon ginger paste

* 1 tablespoon garlic paste

* 1 teaspoon cumin powder

* 1 teaspoon coriander powder

* 1 teaspoon garam masala

* 1 teaspoon red chili powder

* 1 teaspoon turmeric powder

* Salt to taste



For the rice:


* 2 cups basmati rice

* 4 cups water

* 1 teaspoon cumin seeds

* 3-4 green cardamom pods

* 2-3 cloves

* 1 cinnamon stick

* Salt to taste



For the Biryani:


* 2 onions, thinly sliced

* 1/2 cup oil or ghee

* 2 tablespoons ginger paste

* 2 tablespoons garlic paste

* 1 teaspoon cumin powder

* 1 teaspoon coriander powder

* 1 teaspoon garam masala

* 1 teaspoon red chili powder

* 1 teaspoon turmeric powder

* Salt to taste

* Fresh coriander leaves, chopped

* Fresh mint leaves, chopped




Instructions:



1. Wash the basmati rice in running water until the water runs clear. Soak the rice in water for 30 minutes.


2. In a mixing bowl, combine all the ingredients for the chicken marinade. Mix well and marinate the chicken for at least 1 hour.


3. In a large pot, add the soaked rice, water, cumin seeds, green cardamom pods, cloves, cinnamon stick, and salt. Bring the water to a boil and reduce the heat to low. Cover and cook until the rice is cooked and the water is absorbed.


4. In a separate pan, heat oil or ghee over medium heat. Add the sliced onions and fry until they are golden brown.


5. Add the ginger paste and garlic paste to the pan and fry for a minute. Then, add the cumin powder, coriander powder, garam masala, red chili powder, turmeric powder, and salt. Mix well and fry for a minute.


6. Add the marinated chicken to the pan and cook for 10-12 minutes until the chicken is cooked through and the gravy is thickened.


7. In a deep pot, layer the cooked rice and chicken mixture. Sprinkle chopped coriander leaves and mint leaves on top of each layer.


8. Cover the pot and cook on low heat for 10-15 minutes until the flavors are well infused and the biryani is heated through.


9. Serve hot with raita or salad.
