Healthy Quinoa Salad


Here’s a recipe for a healthy and delicious quinoa salad:


Ingredients:


1 cup quinoa
2 cups water or vegetable broth
1 red bell pepper, diced
1 yellow bell pepper, diced
1/2 red onion, diced
1 can black beans, drained and rinsed
1/4 cup chopped fresh cilantro
Juice of 1 lime
2 tablespoons olive oil
Salt and pepper, to taste


Instructions:


Rinse the quinoa thoroughly in a fine-mesh strainer.
In a medium-sized pot, bring the quinoa and water or broth to a boil.
Reduce the heat to low, cover the pot, and let the quinoa simmer for 15-20 minutes, or until all of the liquid has been absorbed.
Remove the pot from the heat and let the quinoa cool to room temperature.
In a large mixing bowl, combine the cooled quinoa with the diced bell peppers, red onion, and black beans.
In a small mixing bowl, whisk together the lime juice, olive oil, salt, and pepper.
Pour the dressing over the quinoa salad and toss to combine.
Garnish with chopped cilantro and serve immediately or chill in the refrigerator until ready to serve.
