Hyderabadi chicken biryani is a classic dish from the city of Hyderabad in India and is known for its flavorful spices and tender meat. Here's a recipe to make delicious Hyderabadi chicken biryani:



Ingredients:


* 2 cups basmati rice, soaked in water for 30 minutes

* 500 grams chicken, cleaned and cut into pieces

* 2 onions, sliced

* 1 tablespoon ginger paste

* 1 tablespoon garlic paste

* 1 cup yogurt

* 2 tablespoons biryani masala

* 1 teaspoon turmeric powder

* 1 teaspoon red chili powder

* 1 teaspoon cumin seeds

* 2 bay leaves

* 4 green cardamom pods

* 4 cloves

* 2 cinnamon sticks

* 2 tablespoons ghee

* 4 cups water

* Salt, to taste



For the garnish:


* Fried onions

* Chopped coriander leaves

* Chopped mint leaves

* Saffron strands soaked in warm milk




Instructions:



1. In a large pot, heat the ghee over medium heat. Add the cumin seeds, bay leaves, green cardamom pods, cloves, and cinnamon sticks. Fry for a few seconds until fragrant.


2. Add the sliced onions and fry until they turn golden brown.


3. Add the ginger and garlic paste and fry for a minute.


4. Add the chicken and fry for 5-7 minutes until the chicken is browned on all sides.


5. Add the yogurt, biryani masala, turmeric powder, red chili powder, and salt. Mix well and cook for another 5 minutes.


6. Drain the water from the soaked rice and add it to the pot. Mix well and cook for 2-3 minutes.


7. Add 4 cups of water and bring to a boil. Cover the pot and reduce the heat to low. Cook for 15-20 minutes until the rice is cooked and the water is absorbed.


8. Turn off the heat and let the biryani rest for 10-15 minutes.


9. Garnish with fried onions, coriander leaves, mint leaves, and saffron strands soaked in warm milk.



Your delicious Hyderabadi chicken biryani is now ready to serve! Enjoy it with raita and papadums for a complete meal.
