Bengali chicken roast with polao is a popular dish in Bangladesh and other parts of the Indian subcontinent. Here's a recipe you can follow to make it at home:



Ingredients for Bengali chicken roast:


* 1 whole chicken, about 1.5 kg

* 1 cup yogurt

* 2 tablespoons ginger paste

* 2 tablespoons garlic paste

* 2 teaspoons red chili powder

* 2 teaspoons turmeric powder

* 2 teaspoons cumin powder

* 2 teaspoons coriander powder

* Salt, to taste

* Oil, for frying



Ingredients for polao:


* 2 cups basmati rice

* 4 cups water

* 1 onion, sliced

* 3 cloves

* 3 cardamom pods

* 2 cinnamon sticks

* Salt, to taste

* Oil, for frying




Directions for Bengali chicken roast:



1. Clean and wash the chicken well, then pat it dry with paper towels.


2. In a mixing bowl, combine the yogurt, ginger paste, garlic paste, red chili powder, turmeric powder, cumin powder, coriander powder, and salt to make a marinade.


3. Rub the marinade all over the chicken, including inside the cavity.


4. Cover the chicken and let it marinate in the refrigerator for at least 2 hours, or overnight if possible.


5. Preheat the oven to 180°C.


6. Heat some oil in a large frying pan over medium-high heat. Add the chicken and fry until golden brown on all sides, about 5-7 minutes per side.


7. Transfer the chicken to a roasting pan and roast in the oven for 45-50 minutes, or until the chicken is fully cooked and tender.


8. Remove the chicken from the oven and let it rest for 10-15 minutes before serving.




Directions for polao:



1. Rinse the rice under running water until the water runs clear.


2. In a large pot, heat some oil over medium-high heat. Add the sliced onion and fry until golden brown.


3. Add the cloves, cardamom pods, and cinnamon sticks and fry for another minute.


4. Add the rice and fry for 2-3 minutes, stirring constantly.


5. Add the water and salt and bring to a boil.


6. Reduce the heat to low, cover the pot, and let the rice cook for about 15-20 minutes, or until the water is absorbed and the rice is tender.


7. Fluff the rice with a fork and serve with the chicken roast.
