Chicken Mandi biryani is a delicious and flavorful dish that originates from the Arabian Peninsula. It is typically made by cooking marinated chicken with aromatic spices and then layering it with basmati rice and slow-cooking it over charcoal or wood fire. 


Here's a recipe that you can try at home:



Ingredients:


* 1 whole chicken, cut into pieces

* 2 cups basmati rice, washed and soaked for 30 minutes

* 2 onions, sliced

* 4 cloves of garlic, minced

* 2 inches ginger, grated

* 1 tomato, chopped

* 1 tablespoon tomato paste

* 1 tablespoon Mandi spice mix (a blend of cumin, coriander, turmeric, cardamom, cinnamon, black pepper, and cloves)

* 1 teaspoon ground black pepper

* 2 tablespoons ghee or clarified butter

* Salt, to taste

* 4 cups water

* 2-3 pieces of coal

* 2 tablespoons vegetable oil




Instructions:



1. In a bowl, mix the chicken pieces with the Mandi spice mix, half of the sliced onions, minced garlic, grated ginger, and salt. Let it marinate for at least an hour.


2. Heat the vegetable oil in a large pot over medium heat. Add the remaining sliced onions and sauté until they turn translucent.


3. Add the marinated chicken and sauté for 5-7 minutes or until the chicken is browned on all sides.


4. Add chopped tomatoes, tomato paste, ground black pepper, and salt. Mix well and cook for another 5 minutes.


5. Add 4 cups of water to the pot and bring it to a boil. Reduce heat to low and let it simmer for about 30-40 minutes or until the chicken is cooked through and tender.


6. In a separate pot, bring 4 cups of water to a boil. Add the soaked basmati rice and a pinch of salt. Cook for 8-10 minutes or until the rice is parboiled.


7. Drain the water from the rice and set it aside.


8. Preheat your oven to 350°F.


9. Grease a large baking dish with ghee or clarified butter. Layer the cooked chicken at the bottom of the dish, followed by a layer of parboiled rice.


10. Repeat the layers until all the chicken and rice is used up.


11. Place 2-3 pieces of coal in a small bowl and heat them until they turn red hot.


12. Place the bowl on top of the biryani in the baking dish and cover the dish tightly with aluminum foil. This will help infuse the biryani with a smoky flavor.


13. Bake the chicken Mandi biryani for about 30 minutes or until the rice is fully cooked.


14. Remove the aluminum foil and serve the biryani hot with some raita or chutney on the side.
