Kacchi Biriyani is a popular dish in South Asian cuisine, which is made with marinated meat, long-grain basmati rice, and a variety of spices. Here's a recipe for delicious Kacchi Biriyani:



Ingredients:



For the meat marinade:


* 1 kg mutton, cut into small pieces

* 1 cup plain yogurt

* 2 tbsp ginger paste

* 2 tbsp garlic paste

* 1 tsp turmeric powder

* 2 tsp cumin powder

* 2 tsp coriander powder

* 2 tsp red chili powder

* 1 tsp garam masala powder

* 2 tbsp mustard oil

* Salt to taste



For the rice:


* 2 cups basmati rice, washed and soaked for 30 minutes

* 4 cups water

* 1 bay leaf

* 2-3 green cardamoms

* 2-3 cloves

* Salt to taste



For the biriyani:


* 2 large onions, thinly sliced

* 1/2 cup ghee

* 1/2 cup milk, infused with a few saffron strands

* 1 cup boiled potatoes

* 1/2 cup raisins

* 1/2 cup cashews




Instructions:



1. In a large bowl, mix together the meat, yogurt, ginger paste, garlic paste, turmeric powder, cumin powder, coriander powder, red chili powder, garam masala powder, mustard oil, and salt. Cover and marinate in the refrigerator for at least 6 hours, or overnight.


2. In a large pot, bring 4 cups of water to a boil. Add the soaked rice, bay leaf, green cardamoms, cloves, and salt. Reduce heat to low, cover, and cook until the rice is tender and the water is absorbed, about 15-20 minutes.


3. In a large skillet, heat the ghee over medium-high heat. Add the sliced onions and fry until golden brown, stirring occasionally. Remove half of the fried onions and set aside.


4. Add the marinated meat to the skillet with the remaining onions and cook over medium-high heat until the meat is browned on all sides.


5. Preheat the oven to 350°F (180°C).


6. In a large baking dish, spread half of the cooked rice in an even layer. Top with the cooked meat, boiled potatoes, raisins, and cashews. Cover with the remaining rice. Pour the saffron-infused milk over the top and sprinkle with the reserved fried onions.


7. Cover the baking dish with foil and bake in the preheated oven for 30-40 minutes, or until the biriyani is hot and bubbly.


8. Serve hot with raita, salad, and your favorite chutney.
