Delicious healthy eggplant roll | Healthy Recipe | Ramadan Special 2023


 


Here's a simple recipe for Eggplant Rolls:



Ingredients:


* 1 large eggplant

* 1 cup ricotta cheese

* 1/2 cup grated parmesan cheese

* 1 egg

* 1 tablespoon chopped fresh basil

* 1 clove garlic, minced

* Salt and pepper to taste

* Olive oil for cooking

* Marinara sauce for serving




Instructions:



1. Preheat the oven to 375°F (190°C).


2. Slice the eggplant lengthwise into thin slices (about 1/4 inch thick). Sprinkle salt over the slices and let them sit for about 15 minutes to draw out excess moisture. Rinse the salt off and pat dry with paper towels.


3. In a mixing bowl, whisk together ricotta cheese, grated parmesan cheese, egg, basil, minced garlic, salt and pepper until well combined.


4. Spread a tablespoon or two of the cheese mixture onto each eggplant slice, and roll up tightly.


5. Place the eggplant rolls on a baking sheet that has been lightly greased with olive oil. Drizzle some additional olive oil over the top of the rolls.


6. Bake for 25-30 minutes, or until the eggplant is tender and the cheese is melted and lightly browned.


7. Serve the eggplant rolls with warm marinara sauce.
