Healthy Chicken Soup




Ingredients:


* 1 whole chicken, cut into pieces (or 4-5 chicken thighs)

* 1 onion, chopped

* 3 cloves garlic, minced

* 2 celery stalks, chopped

* 2 carrots, chopped

* 1 parsnip, chopped (optional)

* 1 bay leaf

* 8 cups chicken broth or stock

* 1 teaspoon dried thyme

* Salt and pepper, to taste

* Fresh parsley or cilantro, chopped (optional)




Instructions:



1. Place the chicken pieces (or thighs) in a large pot and add enough water to cover them. Bring to a boil and then reduce the heat to low. Simmer for about 45 minutes, until the chicken is cooked through and tender.


2. Remove the chicken pieces from the pot and set them aside to cool. Once they are cool enough to handle, remove the meat from the bones and discard the bones and skin.


3. Add the onion, garlic, celery, carrots, parsnip (if using), bay leaf, thyme, salt, and pepper to the pot with the chicken broth or stock. Bring to a boil, reduce heat to low, and simmer for about 30 minutes, until the vegetables are tender.


4. Add the shredded chicken back to the pot and cook for an additional 5-10 minutes to heat through.


5. Remove the bay leaf and discard it. Adjust seasoning as needed.


6. Ladle the soup into bowls and garnish with chopped parsley or cilantro, if desired.
