Roasted Vegetable Medley
Ingredients:
- 1 large sweet potato, peeled and cubed
- 1 large red bell pepper, seeded and sliced

- 1 medium yellow squash, sliced

Directions:

- Drizzle the olive oil over the vegetables and toss to coat evenly.
- Sprinkle the dried thyme, salt, and pepper over the vegetables and toss again to combine.
- Spread the vegetables out in a single layer on a large baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly browned, stirring occasionally.
