Roasted Vegetable Medley



Ingredients:


  • 1 large sweet potato, peeled and cubed
  • 1 large red bell pepper, seeded and sliced
  • 1 large yellow bell pepper, seeded and sliced
  • 1 medium red onion, sliced
  • 1 medium zucchini, sliced
  • 1 medium yellow squash, sliced
  • 2 cloves garlic, minced
  • 3 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper, to taste


Directions:


  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine the sweet potato, red and yellow bell peppers, red onion, zucchini, yellow squash, and garlic.
  3. Drizzle the olive oil over the vegetables and toss to coat evenly.
  4. Sprinkle the dried thyme, salt, and pepper over the vegetables and toss again to combine.
  5. Spread the vegetables out in a single layer on a large baking sheet.
  6. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly browned, stirring occasionally.
  7. Serve hot as a side dish or enjoy as a main course with your favorite protein.
