Chicken tikka biryani is a popular Indian dish that combines the flavors of chicken tikka and biryani. Here's a recipe to make a delicious chicken tikka biryani:



Ingredients:


* 2 cups basmati rice

* 500g boneless chicken, cut into small pieces

* 1/2 cup plain yogurt

* 2 tablespoons ginger-garlic paste

* 2 tablespoons lemon juice

* 2 teaspoons cumin powder

* 2 teaspoons coriander powder

* 1 teaspoon red chili powder

* 1/2 teaspoon turmeric powder

* Salt, to taste

* 1 onion, sliced

* 2-3 green cardamom pods

* 1-2 cinnamon sticks

* 2-3 cloves

* 1 bay leaf

* 1/4 cup chopped coriander leaves

* 1/4 cup chopped mint leaves

* 2 tablespoons ghee or clarified butter

* 2 tablespoons oil




Instructions:



1. Soak the basmati rice in water for 30 minutes. Drain the water and keep the rice aside.


2. In a large mixing bowl, combine the chicken, yogurt, ginger-garlic paste, lemon juice, cumin powder, coriander powder, red chili powder, turmeric powder, and salt. Mix well and marinate for at least 30 minutes.


3. Preheat the oven to 200°C. Line a baking tray with aluminum foil and grease with oil. Place the marinated chicken pieces on the tray and bake for 20-25 minutes or until fully cooked.


4. In a large pot, heat the ghee and oil over medium heat. Add the sliced onions and sauté until golden brown.


5. Add the cardamom pods, cinnamon sticks, cloves, and bay leaf to the pot and sauté for 1-2 minutes.


6. Add the soaked rice and sauté for 3-4 minutes or until the rice turns translucent.


7. Add enough water to the pot to cover the rice (about 4 cups). Add salt to taste.


8. Bring the water to a boil and reduce the heat to low. Cover the pot with a tight-fitting lid and let the rice cook for about 15-20 minutes or until the water has been absorbed and the rice is cooked.


9. Once the rice is cooked, fluff it with a fork and add the baked chicken tikka to the pot. Mix well.


10. Garnish with chopped coriander leaves and mint leaves. Serve hot.
