Chicken masala biryani is a popular Indian dish that is known for its rich flavors and aroma. Here is a recipe for making delicious chicken masala biryani:



Ingredients:


* 2 cups basmati rice, washed and soaked for 30 minutes

* 500 grams chicken, bone-in and cut into medium-sized pieces

* 2 onions, sliced

* 2 tomatoes, chopped

* 2 green chillies, chopped

* 2 tbsp ginger-garlic paste

* 1 tsp cumin seeds

* 1 tsp coriander powder

* 1 tsp garam masala powder

* 1/2 tsp red chilli powder

* 1/2 tsp turmeric powder

* 1/2 cup plain yogurt

* 1/2 cup chopped coriander leaves

* 1/2 cup chopped mint leaves

* 1/2 cup fried onions

* Salt to taste

* Oil for cooking



For the Biryani Masala:


* 1 cinnamon stick

* 4 cloves

* 4 cardamom pods

* 2 bay leaves

* 1 star anise




Instructions:



1. Heat 4 cups of water in a large pot. Add the cinnamon stick, cloves, cardamom pods, bay leaves, and star anise to the water and let it come to a boil.


2. Add the soaked rice to the pot and cook it until it is almost done. The rice should be cooked for about 80% to 90%. Drain the rice and set it aside.


3. Heat oil in a large pan over medium heat. Add the cumin seeds and fry them until they splutter.


4. Add the sliced onions and fry until they turn golden brown. Add the ginger-garlic paste and sauté for 1-2 minutes.


5. Add the chopped tomatoes and green chillies and fry until the tomatoes turn soft and mushy.


6. Add the chicken pieces to the pan and sauté until they are slightly browned.


7. Add the coriander powder, garam masala powder, red chilli powder, turmeric powder, and salt. Mix well and cook for 5-6 minutes.


8. Add the plain yogurt to the pan and mix well. Cover the pan and cook the chicken until it is tender and fully cooked.


9. In a separate pot, layer the cooked rice and chicken masala in alternate layers.


10. Sprinkle chopped coriander leaves, mint leaves, and fried onions over the top of the biryani.


11. Cover the pot with a tight-fitting lid and cook on low heat for about 15-20 minutes.


12. Once the biryani is cooked, remove it from heat and let it sit for 5-10 minutes.


13. Serve the delicious chicken masala biryani hot with raita or your favorite side dish.
