Haji biryani is a popular style of biryani originating from the city of Hyderabad, India. Here's a recipe for making haji biryani:



Ingredients:


* 500g basmati rice

* 750g mutton, cut into medium-sized pieces

* 2 large onions, sliced

* 1 cup yogurt

* 2 tbsp ginger-garlic paste

* 1 tsp red chili powder

* 1 tsp turmeric powder

* 1 tsp coriander powder

* 1 tsp cumin powder

* 2 tsp biryani masala powder

* 2-3 green chilies, chopped

* 1 cup fresh mint leaves, chopped

* 1 cup fresh coriander leaves, chopped

* Salt to taste

* 4-5 tbsp ghee

* 2-3 bay leaves

* 2-3 cinnamon sticks

* 4-5 cardamom pods

* 4-5 cloves

* Juice of 1 lemon

* 1 tsp saffron soaked in 1/4 cup milk

* Fried onions for garnish




Directions:



1. Rinse the basmati rice several times in cold water and soak for 30 minutes.


2. In a large pot, heat 3-4 tbsp of ghee and add the bay leaves, cinnamon, cardamom and cloves. Fry for a minute until fragrant.


3. Add the sliced onions and fry until golden brown.


4. Add the mutton pieces, ginger-garlic paste, chili powder, turmeric powder, coriander powder, cumin powder, and biryani masala powder. Mix well and cook for 10-15 minutes.


5. Add yogurt, chopped green chilies, mint leaves, coriander leaves and salt to taste. Mix well and cook for another 10-15 minutes.


6. Drain the soaked rice and add it to the pot. Pour in enough water to cover the rice by about an inch. Add lemon juice and salt to taste. Cover the pot with a tight-fitting lid and cook on low heat for 20 minutes.


7. After 20 minutes, check to see if the rice is cooked. If it is, turn off the heat and let the biryani rest for 10 minutes.


8. Drizzle saffron-infused milk over the top of the biryani and garnish with fried onions.
