Hyderabad Mutton Dum Biryani Bawarchi/chef style | Delicious Dum Biriyani Recipe | Ramadan Special 2023


 


Hyderabadi Mutton Dum Biryani is a popular South Indian dish known for its rich aroma and flavour. Here's a step-by-step guide on how to make it at home:



Ingredients:


* 1 kg mutton, cut into pieces

* 500g Basmati rice, washed and soaked for 30 minutes

* 4 onions, sliced

* 2 tbsp ginger-garlic paste

* 1 cup yogurt

* 1 tbsp red chili powder

* 1 tbsp turmeric powder

* 2 tsp biryani masala

* 1 tsp cumin seeds

* 1 tsp coriander seeds

* 4-5 green cardamom

* 3-4 cloves

* 1 inch cinnamon stick

* 2 bay leaves

* 1/2 cup mint leaves

* 1/2 cup coriander leaves

* Salt to taste

* Ghee

* Saffron (optional)

* Fried onions (optional)




Instructions:



1. Heat ghee in a pan and add cumin seeds, coriander seeds, green cardamom, cloves, cinnamon stick, and bay leaves. Fry for a few seconds until fragrant.


2. Add sliced onions and sauté until golden brown.


3. Add ginger-garlic paste and sauté for a minute.

4. Add mutton pieces and sauté until browned.


5. Add red chili powder, turmeric powder, biryani masala, and salt to taste. Mix well.


6. Add yogurt, mint leaves, and coriander leaves. Mix well and cook for 5-10 minutes.


7. In a separate pot, boil water with salt and a little bit of ghee. Add soaked Basmati rice and cook until it's 80% done.


8. Strain the rice and add it to the pot with the mutton. Spread the rice evenly over the mutton.


9. Add saffron soaked in milk and fried onions on top of the rice. Cover the pot tightly with a lid or aluminum foil.


10. Heat a tawa on high heat and place the pot on top of it. Cook on high heat for 5-7 minutes.


11. Reduce heat to low and cook for another 15-20 minutes.


12. Turn off the heat and let it sit for another 10-15 minutes.


13. Open the lid and serve hot with raita and salad.
