Beef Stir-Fry with Vegetables



Ingredients:


* 1 lb. beef sirloin, thinly sliced

* 2 tablespoons soy sauce

* 1 tablespoon cornstarch

* 1 tablespoon olive oil

* 1 red bell pepper, sliced

* 1 yellow onion, sliced

* 1 cup sliced mushrooms

* 1 cup snow peas

* 3 cloves garlic, minced

* 1 teaspoon ginger, minced

* 2 green onions, sliced

* Salt and pepper, to taste




Instructions:



1. In a bowl, mix together the soy sauce and cornstarch. Add the beef to the bowl and stir until the beef is coated in the mixture. Set aside.


2. Heat the olive oil in a wok or large skillet over medium-high heat. Add the sliced beef and cook for 2-3 minutes, until browned. Remove the beef from the skillet and set aside.


3. In the same skillet, add the red bell pepper, yellow onion, mushrooms, and snow peas. Stir-fry for 3-4 minutes, until the vegetables are slightly softened.


4. Add the minced garlic and ginger to the skillet and stir-fry for 1-2 minutes, until fragrant.


5. Return the beef to the skillet and stir-fry for an additional 1-2 minutes, until the beef is heated through and the vegetables are tender.


6. Season with salt and pepper to taste. Serve the stir-fry hot, garnished with sliced green onions.



In addition to being quick and easy, stir-frying is also healthy. It results in tender-crisp vegetables that retain more nutrients than if they were boiled. And since stir-frying requires only a small amount of oil, the fat content is low minimum .
