Chicken biryani is a popular South Asian dish that is known for its flavorful rice and tender chicken. Here is a recipe for making chicken biryani:

Ingredients:

For the chicken marinade:

* 500g boneless chicken, cut into small pieces

* 1 cup plain yogurt

* 2 tablespoons ginger-garlic paste

* 1 teaspoon red chili powder

* 1 teaspoon ground turmeric

* 1 teaspoon ground cumin

* 1 teaspoon ground coriander

* Salt, to taste

For the rice:

* 2 cups basmati rice, soaked in water for 30 minutes

* 4 cups water

* 1 bay leaf

* 4 green cardamom pods

* 4 cloves

* 1-inch cinnamon stick

* Salt, to taste

For the biryani:

* 2 tablespoons ghee or oil

* 2 onions, sliced

* 1 tablespoon ginger-garlic paste

* 1 tomato, chopped

* 1 teaspoon red chili powder

* 1 teaspoon ground cumin

* 1 teaspoon ground coriander

* 1/2 teaspoon garam masala

* Salt, to taste

* 1/2 cup chopped fresh cilantro

* 1/2 cup chopped fresh mint leaves

* 1/2 cup fried onions

Instructions:

1. In a large bowl, mix together the chicken, yogurt, ginger-garlic paste, red chili powder, turmeric, cumin, coriander, and salt. Marinate the chicken for at least 30 minutes, or overnight in the refrigerator for maximum flavor.

2. In a large pot, bring 4 cups of water to a boil. Add the soaked rice, bay leaf, cardamom, cloves, cinnamon stick, and salt. Stir to combine and bring the mixture back to a boil. Reduce the heat to low, cover, and cook for 10-15 minutes or until the rice is tender and cooked through. Remove from heat and set aside.

3. In a large pan, heat the ghee or oil over medium heat. Add the sliced onions and sauté until they are golden brown, stirring occasionally. Add the ginger-garlic paste and sauté for another minute.

4. Add the chopped tomato, red chili powder, cumin, coriander, garam masala, and salt to the pan. Stir well and cook for 2-3 minutes until the tomato has softened.

5. Add the marinated chicken to the pan and cook for 10-15 minutes or until the chicken is cooked through.

6. To assemble the biryani, spread half of the cooked rice in a large pot or deep dish. Add the cooked chicken on top of the rice. Sprinkle with chopped cilantro and mint leaves, and top with the remaining rice.

7. Cover the pot or dish with a tight-fitting lid and place over low heat. Cook for 10-15 minutes or until the rice is heated through and the flavors have melded together.

8. Before serving, garnish with fried onions and additional cilantro and mint leaves. Serve hot with raita or cucumber salad on the side.
