Delicious Chicken Kacchi recipe. The flavours are bombastic | Delicious Dum Biriyani Recipe | Ramadan Special 2023


 


Chicken Kacchi is a delicious Bangladeshi dish made with marinated chicken and fragrant basmati rice. Here's a recipe for making Chicken Kacchi at home:



Ingredients:


* 2 cups Basmati rice, soaked in water for 30 minutes

* 1 kg chicken, cut into medium-sized pieces

* 2 cups yogurt

* 2 teaspoons ginger paste

* 2 teaspoons garlic paste

* 1 teaspoon cumin powder

* 1 teaspoon coriander powder

* 1 teaspoon garam masala powder

* 1 teaspoon red chili powder

* Salt to taste

* 2 cups sliced onions

* 2 cups hot water

* 1/2 cup ghee or oil

* 1/4 cup raisins

* 1/4 cup cashew nuts

* 2-3 bay leaves

* 2-3 cinnamon sticks

* 2-3 cardamom pods

* 2-3 cloves

* 2-3 whole peppercorns




Instructions:



1. In a large mixing bowl, combine the yogurt, ginger paste, garlic paste, cumin powder, coriander powder, garam masala powder, red chili powder, and salt. Mix well.


2. Add the chicken pieces to the yogurt marinade and mix well to coat the chicken. Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.


3. Heat the ghee or oil in a large, heavy-bottomed pot over medium heat. Add the sliced onions and sauté until golden brown.


4. Add the marinated chicken to the pot and cook for 10-15 minutes, stirring occasionally, until the chicken is partially cooked.


5. In a separate pot, bring the 2 cups of water to a boil. Drain the soaked rice and add it to the boiling water along with the bay leaves, cinnamon sticks, cardamom pods, cloves, and peppercorns. Cook for 5-7 minutes, then drain the rice and discard the spices.


6. Layer the partially cooked chicken and the rice in the pot, starting with a layer of rice at the bottom, followed by a layer of chicken, and so on, until all the rice and chicken have been used up.


7. Pour the hot water over the top of the rice and chicken, then sprinkle the raisins and cashew nuts over the top.


8. Cover the pot tightly with a lid and cook over low heat for 30-40 minutes, or until the chicken is fully cooked and the rice is tender.


9. Remove the lid and fluff the rice with a fork. Serve hot with raita and salad.
