Swahili chicken biriyani is a delicious dish that combines fragrant rice with spicy chicken and is a staple in East African cuisine. Here's a recipe for making Swahili chicken biriyani:



Ingredients:


* 2 cups basmati rice

* 2 lbs. bone-in chicken thighs, cut into small pieces

* 1 large onion, diced

* 3 cloves garlic, minced

* 1 tbsp. grated ginger

* 2 tbsp. biriyani masala (a spice blend that can be found at Indian or African grocery stores)

* 1 tsp. turmeric

* 2 tsp. salt

* 2 tbsp. vegetable oil

* 1/4 cup chopped fresh cilantro

* 1/4 cup chopped fresh mint

* 2 cups chicken stock

* 1 cup coconut milk

* 1/2 cup raisins

* 1/2 cup toasted cashews




Instructions:



1. Rinse the rice in cold water until the water runs clear. Soak the rice in cold water for at least 30 minutes before cooking.


2. In a large pot or Dutch oven, heat the oil over medium heat. Add the onions and cook until softened, about 5 minutes. Add the garlic and ginger and cook for another 2 minutes.


3. Add the chicken to the pot and cook until browned on all sides. Add the biriyani masala, turmeric, and salt and cook for another 2 minutes.


4. Add the chicken stock and coconut milk to the pot and bring to a boil. Reduce the heat to low, cover, and simmer for 30 minutes.


5. Drain the rice and add it to the pot with the chicken. Stir well to combine. Cover and simmer for another 20-25 minutes, or until the rice is cooked through.


6. Remove the pot from the heat and let it sit for 5 minutes. Fluff the rice with a fork and add the cilantro, mint, raisins, and cashews. Stir gently to combine.


7. Serve the Swahili chicken biriyani hot, garnished with additional cilantro and mint if desired.
