Delicious Mutton Biriyani recipe. The flavours are bombastic | Delicious Dum Biriyani Recipe | Ramadan Special 2023


 


Mutton biryani is a flavorful and aromatic dish that can be made with a few simple ingredients and some basic cooking techniques. Here's a recipe to help you make delicious mutton biryani at home:



Ingredients:


* 1 kg mutton, cut into medium-sized pieces

* 2 cups basmati rice

* 3 onions, sliced thinly

* 3 tomatoes, chopped

* 1 tbsp ginger paste

* 1 tbsp garlic paste

* 2 green chilies, slit

* 1 cup yogurt

* 1 tbsp red chili powder

* 1 tbsp coriander powder

* 1 tsp turmeric powder

* 1 tsp cumin powder

* 1 tsp garam masala powder

* 2 bay leaves

* 4-5 cloves

* 2-3 cardamom pods

* 1 cinnamon stick

* Salt to taste

* Oil for cooking

* Ghee for cooking




Instructions:



1. Wash the rice thoroughly and soak it in water for 30 minutes.


2. In a deep-bottomed pan or pressure cooker, heat some oil and ghee.


3. Add the bay leaves, cloves, cardamom pods, and cinnamon stick to the pan and fry for a few seconds.


4. Add the sliced onions to the pan and fry until they turn golden brown.


5. Add the ginger-garlic paste and green chilies to the pan and fry for 1-2 minutes.


6. Add the chopped tomatoes and fry until they turn soft and mushy.


7. Add the mutton pieces to the pan and fry until they turn brown on all sides.


8. Add the red chili powder, coriander powder, turmeric powder, cumin powder, and garam masala powder to the pan and fry for 2-3 minutes.


9. Add the yogurt to the pan and mix well.


10. Add enough water to the pan to cover the mutton pieces.


11. Add salt to taste and bring the mixture to a boil.


12. Reduce the heat and let the mixture simmer until the mutton is cooked through and the gravy has thickened.


13. Meanwhile, drain the soaked rice and add it to a large pot of boiling water.


14. Cook the rice until it is 80% done and then drain it.


15. In a separate deep-bottomed pan, layer the cooked mutton and the partially cooked rice alternately.


16. Cover the pan with a tight-fitting lid and place it over low heat.


17. Let the biryani cook on low heat for 10-15 minutes or until the rice is fully cooked.


18. Serve the mutton biryani hot with raita and salad on the side.
