How to make delicious mutton biriyani restaurant style | Healthy Recipe | Ramadan Special 2023


 


Mutton biriyani is a popular South Asian dish that consists of fragrant rice cooked with succulent mutton pieces, aromatic spices, and other flavorful ingredients. Here's a recipe to make it:



Ingredients:


* 500g mutton, cut into small pieces

* 3 cups basmati rice, washed and soaked in water for 30 minutes

* 2 onions, sliced thinly

* 2 tomatoes, chopped

* 4 green chillies, slit

* 2 tsp ginger-garlic paste

* 1 tsp red chilli powder

* 1/2 tsp turmeric powder

* 1 tsp garam masala powder

* 1/2 tsp cumin powder

* 1/2 tsp coriander powder

* 1/2 cup plain yogurt

* 1/2 cup chopped fresh coriander leaves

* 1/2 cup chopped fresh mint leaves

* 2 tbsp ghee

* 2 tbsp oil

* Salt to taste



For the biriyani masala:


* 3 green cardamom pods

* 3 cloves

* 1-inch cinnamon stick

* 1 bay leaf

* 1 star anise

* 1 tsp fennel seeds

* 1 tsp cumin seeds




Instructions:



1. Heat oil and ghee in a large pot or Dutch oven over medium heat. Add the sliced onions and fry until golden brown. Remove half of the fried onions and set aside for later use.


2. To the remaining onions in the pot, add the mutton pieces and fry until browned on all sides.


3. Add the ginger-garlic paste, red chilli powder, turmeric powder, cumin powder, coriander powder, and garam masala powder to the pot. Stir for a few minutes until the spices are fragrant.


4. Add the chopped tomatoes, green chillies, yogurt, and salt to the pot. Stir well and bring to a boil. Reduce the heat to low and cover the pot. Simmer for 45 minutes or until the mutton is tender and cooked through.


5. In a separate pot, bring 6 cups of water to a boil. Add the soaked rice and cook until the rice is 70% done. Drain the water and set the rice aside.


6. To make the biriyani masala, heat a small skillet over medium heat. Add all the spices for the biriyani masala and roast until fragrant. Grind the spices into a fine powder using a spice grinder or mortar and pestle.


7. Preheat the oven to 350°F (180°C).


8. To assemble the biriyani, layer half of the cooked rice at the bottom of a large baking dish. Add the cooked mutton and gravy on top of the rice. Sprinkle half of the biriyani masala, fried onions, chopped mint leaves, and chopped coriander leaves on top of the mutton. Repeat the layers with the remaining rice, biriyani masala, fried onions, and herbs.


9. Cover the baking dish with foil and bake for 20-25 minutes or until the rice is fully cooked and the flavors are well combined.


10. Serve the mutton biriyani hot with raita, cucumber slices, and lime wedges.
